- Prepare the Vegetables: Start by washing and slicing your cucumbers, tomatoes, beetroot (if using), and grating the carrots.
- Make the Chutney: Blend fresh coriander, green chilies, lemon juice, salt, and spices until smooth or use store-bought green chutney.
- Assemble the Sandwich: Spread 2 tablespoons of green chutney on two slices of bread, then evenly layer 1/2 cup mashed potatoes on one slice and season with salt and pepper.
- Add Vegetables: Layer cucumber, tomatoes, grated carrots, and beetroot over the mashed potatoes.
- Top and Toast: Place a second chutney-spread slice of bread on top. Heat a griddle over medium heat, spread 1 tablespoon of butter, and toast the sandwich for 2–3 minutes per side until golden brown.
- Cut and Serve: Remove from heat, cut the sandwich into halves or quarters, sprinkle chaat masala if desired, and serve warm.
Notes
For a crispy texture, don’t skimp on the butter while toasting the sandwich.
