- Rinse the dried navy beans under cool water to remove any dirt and debris.
- Place the beans in a large pot, cover with 3 cups of water, and soak overnight.
- Preheat your oven to 300°F (150°C) for a low and slow bake.
- Drain and rinse the soaked beans to reduce gas-producing compounds.
- Combine the beans, molasses, brown sugar, Dijon mustard, salt, pepper, chopped onion, and Worcestershire sauce in the Dutch oven.
- Top the bean mixture with salt pork or diced bacon so the fat renders into the beans.
- Add enough water to just cover the beans to ensure even cooking.
- Cover the pot and bake at 300°F (150°C) for about 6 hours, stirring occasionally and adding water if the beans become dry.
Notes
Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months; flavors improve overnight.
