Method
- In a small bowl, combine 1 ½ cups warm water (110°F), 2 tablespoons sugar, and 2 ¼ teaspoons active dry yeast. Let sit for 5 to 10 minutes until frothy.
- In a large mixing bowl, whisk together 4 cups all-purpose flour and 2 teaspoons salt.
- Make a well in the center of the flour mixture and pour in the yeast mixture and 2 tablespoons olive oil. Stir until a shaggy dough forms.
- Turn the dough onto a floured surface and knead for 8 to 10 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl, cover with plastic wrap or a kitchen towel, and let rise in a warm spot for 1 hour or until doubled in size.
- Punch down the dough to release excess air and shape into loaves or rolls.
- Cover the shaped dough and let rise for 30 minutes until puffy.
- Preheat the oven to 375°F (190°C). Bake the loaves on a baking sheet or in a bread pan for 25 to 30 minutes, until golden brown.
Notes
Make sure your water is warm (not hot) to avoid killing the yeast. Dough can be refrigerated for up to 3 days or frozen for up to 3 months, thawing overnight in the refrigerator before use.
