  • 2 cups butterscotch chips

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2 to 3 minutes.
  4. Beat in the eggs one at a time, then mix in the vanilla extract until well combined.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the butterscotch chips gently.
  8. Drop tablespoon-sized balls of dough onto the prepared baking sheet and bake for 10 to 12 minutes, or until the edges are golden. Cool on a wire rack before serving.
