Method
 

  1. Peel the baby carrots if needed using a vegetable peeler.
  2. Heat a large skillet over medium heat and add the unsalted butter, melting completely without browning.
  3. Add the prepared carrots to the skillet and stir to coat them evenly in the melted butter.
  4. Sprinkle the brown sugar over the carrots and stir to combine, allowing the sugar to begin caramelizing.
  5. Season with salt, black pepper, and ground cinnamon, stirring to distribute the spices.
  6. Cook the carrots over medium heat for 15 minutes, stirring occasionally, until they are tender and golden brown.
  7. Check for doneness by piercing the carrots with a fork; they should be fork-tender with a slight bite.
  8. Remove from heat and transfer to a serving dish; garnish with fresh herbs if desired.
