- In a mixing bowl, combine 1 ½ cups graham cracker crumbs and ½ cup melted unsalted butter until well mixed.
- Press the graham cracker mixture evenly into the bottom of a 9-inch pie dish to form the crust.
- In another bowl, beat 1 cup powdered sugar, 8 oz softened cream cheese, and 1 tsp vanilla extract until smooth and creamy.
- In a separate bowl, whip 1 cup heavy whipping cream until stiff peaks form, about 3 to 4 minutes on medium speed.
- Gently fold the whipped cream into the cream cheese mixture to maintain volume and create a light filling.
- Spoon the combined filling over the prepared crust in the pie dish, spreading it into an even layer.
- Cover the pie dish and refrigerate for at least 3 hours to allow the filling to set properly.
- Before serving, spread 1 can (21 oz) cherry pie filling evenly over the chilled cream layer.
