Ingredients
  

Main
  • 8 oz dried Chinese egg noodles or wheat noodles
  • 2 tbsp vegetable oil
  • 1 cup bell peppers sliced
  • 1 cup broccoli florets
  • 1 cup carrots thinly sliced
  • 3 green onions chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp sesame oil
  • Salt to taste

Equipment

  • Large pot
  • Colander
  • Wok or large skillet
  • Wooden spoon or spatula
  • Measuring cups and spoons

Method
 

  1. Bring a large pot of salted water to a rolling boil over high heat.
  2. Add the noodles and cook for 4 to 6 minutes until al dente, then drain and rinse under cold water to stop cooking.
  3. In a wok or large skillet over medium-high heat, heat the vegetable oil.
  4. Add bell peppers, broccoli, and carrots and stir-fry for 3 to 5 minutes until tender-crisp.
  5. Add the cooked noodles to the wok and toss gently to combine.
  6. Pour in soy sauce, oyster sauce, and sesame oil and cook for 1 to 2 minutes while tossing to coat evenly.
  7. Stir in chopped green onions and cook for another minute.
  8. Transfer noodles to a serving dish and serve hot, garnished with extra green onions if desired.

Notes

Use a mix of vegetables for color and texture, and feel free to add protein like chicken, shrimp, or tofu.
