  • 1 cup mayonnaise
  • 2 to 3 chipotle peppers in adobo sauce minced
  • 2 tablespoons adobo sauce
  • 3 cloves garlic minced
  • 2 tablespoons fresh lime juice about one lime
  • 1 tablespoon fresh cilantro minced (optional)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon smoked paprika optional

Method
 

  1. Mince 2 to 3 chipotle peppers and 3 cloves of garlic finely.
  2. Pour 1 cup of mayonnaise into a medium mixing bowl.
  3. Add minced chipotle peppers and 2 tablespoons of adobo sauce to the mayonnaise and stir until evenly combined.
  4. Stir in the minced garlic until fully blended into the mixture.
  5. Whisk in 2 tablespoons of fresh lime juice until smooth and bright.
  6. Fold in 1 tablespoon of minced cilantro, if using, until just incorporated.
  7. Add 1/2 teaspoon ground cumin, 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/8 teaspoon smoked paprika if desired, then stir to combine.
  8. Taste the aioli and adjust seasoning or heat by adding more salt, lime juice, or minced chipotle as needed.
  9. Transfer the aioli to a clean glass jar, seal, and refrigerate. Let sit for at least 15 minutes before serving for optimal flavor.

Notes

Store in the refrigerator for up to two weeks. Let sit at room temperature for 15 minutes before serving.
