- In a medium saucepan, combine 1 cup granulated sugar and 1/2 cup unsweetened cocoa powder.
- Add 1/2 cup unsalted butter and 1/2 cup milk to the saucepan and stir over medium heat until melted and smooth.
- Increase heat to medium-high and bring the mixture to a rolling boil.
- Boil for exactly 1 minute without stirring to activate the sugars.
- Remove the saucepan from heat and let the mixture cool for 2 minutes.
- Stir in 2 cups old-fashioned oats and 1/2 cup creamy peanut butter until well combined.
- Mix in 1 teaspoon vanilla extract and a pinch of salt to balance the sweetness.
- Drop spoonfuls of the mixture onto a parchment-lined cookie sheet and let cookies cool and set for at least 30 minutes.
