  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 2 cups old-fashioned oats
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method
 

  1. In a medium saucepan, combine 1 cup granulated sugar and 1/2 cup unsweetened cocoa powder.
  2. Add 1/2 cup unsalted butter and 1/2 cup milk to the saucepan and stir over medium heat until melted and smooth.
  3. Increase heat to medium-high and bring the mixture to a rolling boil.
  4. Boil for exactly 1 minute without stirring to activate the sugars.
  5. Remove the saucepan from heat and let the mixture cool for 2 minutes.
  6. Stir in 2 cups old-fashioned oats and 1/2 cup creamy peanut butter until well combined.
  7. Mix in 1 teaspoon vanilla extract and a pinch of salt to balance the sweetness.
  8. Drop spoonfuls of the mixture onto a parchment-lined cookie sheet and let cookies cool and set for at least 30 minutes.

Store cookies in an airtight container at room temperature for up to one week or freeze for up to three months.
