  • 1 package Jiffy Corn Muffin Mix
  • 1 cup sour cream
  • 1/2 cup butter melted
  • 1 cup shredded cheddar cheese optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish with butter or cooking spray.
  3. In a large mixing bowl, combine the whole kernel corn, cream-style corn, Jiffy Corn Muffin Mix, sour cream, and melted butter; stir until just combined.
  4. Fold in the shredded cheddar cheese if using.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake in the preheated oven for 45 minutes, or until the edges are golden brown.
  7. Remove the casserole from the oven and let it cool for about 10 minutes.
  8. Cut into squares and serve warm.

Notes

For extra flavor, add diced green chilies or jalapeños. Leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months.
