- Heat 1 teaspoon of olive oil in a large pot over medium heat.
- Add diced onion and bell pepper and sauté until softened, about 5 minutes.
- Add minced garlic and ground beef; cook and break apart until beef is browned, about 5–7 minutes.
- Stir in chili powder, cumin, and paprika and cook for 1 minute to bloom the spices.
- Add drained kidney beans, black beans, and crushed tomatoes; stir to combine.
- Bring the chili to a gentle simmer, then reduce heat to low and simmer uncovered for 1 hour.
- Season with salt and pepper to taste.
- Ladle the chili into bowls and serve hot with optional toppings.

Letting the chili sit for a few hours or overnight in the fridge enhances the flavors remarkably.
