  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon rosemary chopped
  • 1 cup low-sodium chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar

Method
 

  1. Trim excess fat from the pork loin to prevent greasiness.
  2. Rub the pork loin with salt, black pepper, and chopped rosemary, ensuring even coverage.
  3. Heat olive oil in a large skillet over medium-high heat and sear the pork loin on all sides until browned, about 2-3 minutes per side.
  4. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  5. Transfer the seared pork loin and garlic with juices into the crockpot.
  6. Pour in low-sodium chicken broth, soy sauce, and apple cider vinegar into the crockpot.
  7. Cover and cook on low for 6 hours to allow the meat to become tender.
  8. Use a meat thermometer to check the internal temperature; it should reach 145°F (63°C) for safe consumption.
  9. Remove the pork loin from the crockpot and let it rest for 5-10 minutes before slicing to retain juices.
  10. Optional: Pour the cooking liquid into a skillet and simmer over medium heat until the sauce thickens to desired consistency.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Add a splash of broth when reheating to retain moisture.
