  • 4 medium cucumbers peeled and diced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon sugar optional
  • 1 cup water
  • Pinch of salt

  • Fine mesh strainer or cheesecloth

Method
 

  1. Wash and peel the cucumbers, then dice them into chunks.
  2. Add the diced cucumbers, lemon juice, sugar, water, and salt to a blender and blend until smooth.
  3. Strain the blended mixture through a fine mesh strainer or cheesecloth into a pitcher.
  4. Taste the juice and adjust sweetness or acidity by adding more sugar or lemon juice as desired.
  5. Pour the juice into glasses over ice and chill in the refrigerator for about 30 minutes for optimal freshness.
  6. Garnish with cucumber slices or a sprig of mint if desired before serving.
  7. Serve the juice within a few hours to maintain the best flavor.

Notes

Store leftover juice in an airtight container in the refrigerator for up to 24 hours. Stir or shake before serving.
