  • 2 cups cooked chicken shredded or diced into bite-sized pieces (rotisserie works perfectly)
  • 3/4 cup mayonnaise full-fat for richness
  • 1/4 cup plain Greek yogurt adds tang and reduces heaviness
  • 2 tablespoons curry powder or more to taste depending on heat preference
  • 1 tablespoon honey balances the spice with subtle sweetness
  • 1 tablespoon fresh lime juice brightens all the flavors
  • 1/2 teaspoon sea salt adjust based on chicken saltiness
  • 1/4 teaspoon black pepper
  • 1/2 cup diced mango fresh or frozen thawed
  • 1/2 cup diced red bell pepper adds crunch and color
  • 1/3 cup sliced green onion white and light green parts only
  • 1/4 cup chopped cilantro optional but recommended
  • 1/4 cup roasted cashews chopped, adds textural contrast

Method
 

  1. Pull the meat from the rotisserie chicken into bite-sized pieces, discarding skin and bones.
  2. In a medium mixing bowl, whisk together mayonnaise, Greek yogurt, curry powder, honey, lime juice, salt, and pepper until fully combined.
  3. Transfer the shredded chicken to a large mixing bowl and pour the curry dressing over it; fold gently to coat each piece evenly.
  4. Dice the mango and red bell pepper into 1/4-inch pieces; slice the green onions and chop the cilantro if using.
  5. Add the mango, red bell pepper, green onions, and cilantro to the chicken mixture; fold gently until evenly distributed.
  6. Chop the roasted cashews and fold them into the salad just before serving to retain their crunch.
  7. Taste and adjust seasoning, adding more curry powder, honey, or yogurt as needed to balance flavor.
  8. Cover the bowl and refrigerate for at least 30 minutes before serving, or chill overnight for deeper flavor.

Notes

Best if chilled for at least 30 minutes; flavors develop as it rests and add nuts just before serving to maintain crispness.
