- Trim any silver skin from the deer backstrap using a sharp knife to ensure tenderness.
- In a mixing bowl, combine the olive oil, minced garlic, Worcestershire sauce, soy sauce, chopped rosemary, chopped thyme, salt, and pepper to prepare the marinade.
- Add the backstrap to the marinade, coat evenly, and refrigerate for at least 30 minutes.
- Preheat the grill or grill pan to medium-high heat (about 400°F).
- Remove the backstrap from the marinade and let the excess drip off before placing it on the hot grill.
- Grill the backstrap for 4-5 minutes per side for medium-rare doneness.
- Use a meat thermometer to check the internal temperature reaches 130-135°F.
- Remove the backstrap from the grill and let it rest for 5-10 minutes to redistribute the juices.
- Slice the backstrap into medallions and serve immediately.
