- Heat the olive oil in a large pot over medium heat and sauté the diced onion, minced garlic, and diced bell pepper until softened, about 5 minutes.
- Add the ground deer meat to the pot and cook over medium heat until browned, about 10 minutes, breaking it apart as it cooks.
- Stir in the chili powder, cumin, smoked paprika, and oregano, and cook for 1 minute until aromatic.
- Add the diced tomatoes, tomato paste, and beef broth to the pot and stir to combine.
- Bring the chili to a simmer, then reduce heat to low and cook, uncovered, for 60 minutes.
- Stir in the drained and rinsed kidney beans and simmer for an additional 10 minutes.
- Season the chili with salt and pepper to taste.
- Serve the chili hot, with optional toppings such as shredded cheese, sour cream, or cilantro.
