Ingredients

  • 2 pounds fresh green beans trimmed
  • 3 cups distilled white vinegar
  • 3 cups water
  • 1/4 cup kosher salt
  • 4 cloves garlic peeled
  • 4 tablespoons dill seeds or 4 bunches fresh dill
  • 1/2 teaspoon red pepper flakes optional

  • Ball jars with lids
  • Jar lifter
  • Canning funnel
  • Measuring cups and spoons
  • Chopping board and knife

Method
 

  1. Sterilize jars and lids by boiling them in water for 10 minutes.
  2. Wash and trim green beans to 4–5 inch lengths.
  3. In a large pot over medium-high heat, combine vinegar, water, and kosher salt and bring to a rolling boil, about 5 minutes.
  4. Pack beans vertically into each sterilized jar, leaving 1/2 inch headspace.
  5. Add to each jar 1 clove garlic, 1 tablespoon dill seeds or a bunch of fresh dill, and a pinch of red pepper flakes.
  6. Pour hot brine over the beans, maintaining 1/2 inch headspace.
  7. Wipe jar rims, place lids, and screw bands fingertip-tight.
  8. Process jars in a boiling water bath for 10 minutes, then remove and cool completely.
  9. Let jars sit for at least 1 week before opening to allow flavors to develop.

Notes

Use fresh, crisp beans for best texture and let jars sit for at least one week before tasting.
