A silky, creamy Indian-style gelatin dessert that sets in the fridge and can be customized with fruit and nuts.

Ingredients
  

Main
  • Gelatin powder unflavored - 1 package (about 7 grams or 2 teaspoons)
  • Whole milk - 2 cups
  • Sweetened condensed milk - 1/2 cup
  • Water - 1/2 cup
  • Vanilla extract - 1 teaspoon
  • Sugar - 2 tablespoons adjust to taste
  • Salt - a pinch
  • Fresh fruit optional - 1 cup (grapes, berries, or diced mango)
  • Chopped nuts optional - 1/4 cup (almonds, pistachios, or cashews)

Equipment

  • Large mixing bowl
  • Small saucepan or cooking pot
  • Wooden spoon or whisk
  • Measuring cups and spoons
  • Gelatin mold or glass serving dish
  • Refrigerator
  • Knife for cutting (optional)

Method
 

  1. Pour 1/2 cup water into a small bowl and sprinkle gelatin powder over the surface. Let it sit undisturbed for 2-3 minutes to bloom.
  2. In a small saucepan, combine whole milk, sweetened condensed milk, sugar, and salt. Heat over medium heat, stirring occasionally, until steam rises but the mixture does not boil (about 5 minutes).
  3. Add the bloomed gelatin to the hot milk mixture and stir constantly for 1-2 minutes until completely dissolved and smooth.
  4. Remove from heat and stir in vanilla extract. Taste and adjust sweetness if needed.
  5. Pour mixture into a heatproof bowl and let cool to room temperature, stirring occasionally, about 10-15 minutes.
  6. Once cooled, gently fold in fresh fruit and chopped nuts, if using, until evenly distributed.
  7. Carefully pour the mixture into a gelatin mold or glass dish, tapping gently to release any air bubbles.
  8. Cover loosely with plastic wrap and refrigerate for at least 4 hours, or until set and slightly wobbly.

Notes

Serve chilled, straight from the mold or cut into cubes. Garnish with whipped cream, crushed pistachios, or fresh fruit as desired.
