Dough
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 3/4 cup warm water
  • Oil for deep frying vegetable or peanut oil
Topping
  • 2 tablespoons salt
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper

Method
 

  1. Combine flour, cornstarch, salt, cayenne pepper, garlic powder, black pepper, and paprika in a large mixing bowl and whisk until well blended.
  2. Slowly pour 3/4 cup warm water into the dry mixture while stirring with a fork until a stiff dough forms.
  3. Turn the dough onto a lightly floured surface and knead for about 2 minutes until smooth and elastic.
  4. Roll the dough between two sheets of parchment paper into a 1/8-inch thick sheet using a rolling pin.
  5. Cut the rolled dough into 1.5-inch squares using a sharp knife or pizza cutter and set aside.
  6. Heat oil in a deep skillet or heavy-bottomed pot to 350°F (175°C) using a candy or deep-fry thermometer.
  7. Fry crackers in small batches of 8 to 10 pieces for 2 to 3 minutes, stirring gently halfway through, until golden brown.
  8. Remove crackers with a slotted spoon and drain on paper towels, then immediately sprinkle with the topping mixture.
  9. Transfer crackers to a cooling rack and let cool for at least 10 minutes before serving or storing.

Notes

Store cooled crackers in an airtight container at room temperature for up to 5 days.
