- Wash squash under cool running water and pat completely dry with paper towels.
- Slice squash into 1/4-inch thick rounds using a sharp chef's knife.
- Arrange slices on paper towels, sprinkle lightly with 1 teaspoon kosher salt, and let sit 5 to 8 minutes to draw out moisture.
- Pat slices dry again with paper towels before coating.
- Whisk together flour, 1 teaspoon kosher salt, black pepper, garlic powder, and cayenne pepper in a shallow bowl.
- Pour buttermilk into a second shallow bowl for dipping.
- Heat vegetable oil in a large skillet over medium-high heat to 350 to 375 degrees Fahrenheit.
- Dip each slice into buttermilk, then dredge in flour mixture, ensuring even coating.
- Working in batches, carefully place coated slices into hot oil and fry 2 to 3 minutes per side until golden brown and crispy.
- Remove squash with a slotted spoon and drain on paper towels, then season with additional salt while still warm.

Keep finished fried squash warm in a 200°F oven on a wire rack until ready to serve and enjoy immediately for best texture.
