  • 4 cups mixed fresh fruit like peaches, blueberries, or blackberries
  • 1 cup granulated sugar divided
  • 2 tablespoons lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter melted

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Wash and slice the fruit if necessary, then toss with 1/2 cup of the sugar and the lemon juice.
  3. In a mixing bowl, combine the flour, baking powder, salt, and the remaining 1/2 cup sugar.
  4. Stir in the milk and melted butter until just combined, being careful not to overmix.
  5. Grease a 9x13 inch baking dish and spread the batter evenly across the bottom.
  6. Evenly distribute the prepared fruit mixture over the batter.
  7. Bake for 40 to 45 minutes or until the top is golden brown and the fruit is bubbly.
  8. Let the cobbler cool for about 10 minutes before serving to allow the juices to set.
