  • 1 cup cooked chickpeas or canned, drained
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves roasted garlic
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • Water as needed for consistency

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wrap garlic cloves in foil with a drizzle of olive oil and roast on a baking sheet for 25-30 minutes until caramelized and soft.
  3. In a food processor, combine cooked chickpeas, tahini, and roasted garlic.
  4. Add olive oil, fresh lemon juice, and ground cumin to the mixture.
  5. Process until creamy, adding water a tablespoon at a time to reach desired consistency.
  6. Season with salt to taste, blending briefly to incorporate.
  7. Transfer hummus to a serving bowl and drizzle with olive oil.
  8. Serve with pita, fresh vegetables, or use as a spread and enjoy immediately.

Notes

For an extra creamy consistency, peel the skins off the chickpeas before blending.
