- Remove outer leaves from the red cabbage and discard them.
- Thinly slice the cabbage into 1/8-inch strips using a sharp knife.
- Chop the onion into small pieces.
- Heat 2 tablespoons olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in sliced cabbage and cook for 5 minutes, stirring occasionally.
- Pour in 1 cup apple cider vinegar and 1/2 cup brown sugar, stirring until sugar dissolves.
- Add 1 cup water, 1 teaspoon caraway seeds, salt and pepper to taste, bring to a simmer.
- Reduce heat to low, cover and cook for 35 to 45 minutes, stirring occasionally.
Notes
For best results, let the cabbage rest for a few hours or overnight to deepen the flavors.
