German Red Cabbage

Ingredients
  

Main
  • 1 medium head red cabbage thinly sliced
  • 1 medium onion chopped
  • 2 tablespoons olive oil
  • 1 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 1 teaspoon caraway seeds optional
  • Salt to taste
  • Pepper to taste
  • 1 cup water

Method
 

  1. Remove outer leaves from the red cabbage and discard them.
  2. Thinly slice the cabbage into 1/8-inch strips using a sharp knife.
  3. Chop the onion into small pieces.
  4. Heat 2 tablespoons olive oil in a large pot or Dutch oven over medium heat.
  5. Add chopped onion and sauté until translucent, about 5 minutes.
  6. Stir in sliced cabbage and cook for 5 minutes, stirring occasionally.
  7. Pour in 1 cup apple cider vinegar and 1/2 cup brown sugar, stirring until sugar dissolves.
  8. Add 1 cup water, 1 teaspoon caraway seeds, salt and pepper to taste, bring to a simmer.
  9. Reduce heat to low, cover and cook for 35 to 45 minutes, stirring occasionally.

Notes

For best results, let the cabbage rest for a few hours or overnight to deepen the flavors.
