- Preheat the oven to 350°F (175°C).
- In a mixing bowl, whisk together 2 cups all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
- In another bowl, cream together 1/2 cup softened unsalted butter and 1/2 cup granulated sugar until light and fluffy.
- Beat in 1 large egg, 2 tablespoons orange juice, and 1 teaspoon vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until a soft dough forms.
- Wrap the dough in plastic wrap and refrigerate for 20 minutes.
- On a lightly floured surface, roll the chilled dough to 1/4 inch thickness.
- Use a cookie cutter or a glass to cut out circles from the dough.
- Place 1 teaspoon of filling on each circle, then fold the edges to form a triangle and pinch the corners to seal.
- Arrange the triangles on a parchment-lined baking sheet, spacing them 1 inch apart.
- Bake in the preheated oven for 20 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Serve warm or at room temperature; sprinkle with powdered sugar before serving for added sweetness.
