Ingredients
  

Main
  • 1/4 cup soy sauce
  • 2 tablespoons vegetable oil
  • 2 tablespoons brown sugar
  • 2 tablespoons white vinegar
  • 2 teaspoons ground allspice
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cinnamon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 Scotch bonnet pepper seeded for less heat
  • 1/4 cup green onions chopped
  • 1 tablespoon fresh ginger grated

Equipment

  • Blender or food processor
  • Measuring cups and spoons
  • Mixing bowl
  • Spatula

Method
 

  1. Add all ingredients to a blender or food processor and blend until smooth, about 1 minute.
  2. Transfer the sauce to a saucepan and bring to a gentle simmer over medium heat. Cook for 5 minutes, stirring occasionally.
  3. Taste the sauce and adjust the heat by adding more cayenne pepper or chopped Scotch bonnet pepper as desired.
  4. Let the sauce cool slightly, then transfer to a clean jar or airtight container.
  5. Refrigerate the sauce for up to one week.
  6. Marinate protein or vegetables in the sauce for at least 2 hours or overnight for deeper flavor.

Notes

For deeper flavor, marinate overnight. Store in a sealed container in the refrigerator for up to one week.
