  • 2 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup fruit preserves or jam apricot, raspberry, or your choice
  • Powdered sugar for dusting

Method
 

  1. In a mixing bowl, cream together the softened butter, cream cheese, and granulated sugar until light and fluffy.
  2. Gradually add the all-purpose flour and vanilla extract to the mixture and mix just until combined.
  3. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  4. Preheat your oven to 350°F (175°C).
  5. On a lightly floured surface, roll out the dough to about 1/8 inch thickness.
  6. Using a cookie cutter or glass, cut out circles about 3 inches in diameter.
  7. Place a teaspoon of fruit preserves in the center of each circle, fold into a triangle, and seal the edges.
  8. Arrange the pastries on a parchment-lined baking sheet and bake for 18-20 minutes at 350°F (175°C), until the edges are golden.
  9. Remove from the oven, let cool slightly, and dust with powdered sugar before serving.

Notes

Ensure the preserves are not too runny to avoid leakage during baking. Dust with powdered sugar just before serving.
