Method
 

  1. In a bowl, combine 1/4 cup olive oil, juice of 2 lemons, 4 minced garlic cloves, 1 teaspoon dried oregano, salt, and pepper to create the marinade.
  2. Add 4 boneless skinless chicken breasts to the marinade, ensuring they are fully coated. Marinate for at least 30 minutes, or up to overnight for deeper flavor.
  3. Heat a large skillet over medium heat until hot, about 2 minutes.
  4. Place the marinated chicken breasts in the skillet and cook for 6-7 minutes on each side, or until golden brown and the internal temperature reaches 165°F.
  5. While cooking, spoon pan juices over the chicken periodically to baste and keep it moist.
  6. Once cooked, remove the chicken from the skillet and let it rest for 5 minutes to allow juices to redistribute.
  7. Sprinkle chopped fresh parsley over the chicken as a garnish.
  8. Serve the lemon garlic chicken alongside your favorite sides and enjoy immediately.

Notes

For extra flavor, consider adding capers to the marinade for a briny kick!
