Ingredients

  • 1 pound fresh mushrooms button or cremini
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Wipe the mushrooms with a damp cloth to remove any dirt, avoiding soaking them in water.
  2. Slice the cleaned mushrooms into halves or quarters, depending on their size.
  3. In a medium mixing bowl, whisk together olive oil, red wine vinegar, minced garlic, thyme, salt, and black pepper.
  4. Add the sliced mushrooms to the bowl and gently toss until they are well coated with the marinade.
  5. Transfer the mushrooms and marinade to a jar or airtight container and let them marinate for at least 30 minutes at room temperature or refrigerate for 1 hour for deeper flavor.
  6. Store the marinated mushrooms in the refrigerator for up to 5 days, keeping them submerged in the marinade.
  7. Before serving, taste the mushrooms and adjust seasoning if needed, adding more salt or a squeeze of lemon juice to brighten the flavors.
  8. Serve the mushrooms chilled or at room temperature as an appetizer, side dish, or salad topping.

Notes

Serve chilled or at room temperature. They keep for up to 5 days in the refrigerator.
