  • 3 cups cooked chicken shredded
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can diced green chilies
  • 1 package crushed Ritz crackers about 30 crackers
  • 1/2 cup butter melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, shredded cheddar cheese, and diced green chilies. Stir until well combined.
  3. Season the mixture with garlic powder, onion powder, salt, and pepper to taste.
  4. In a separate bowl, mix the crushed Ritz crackers with melted butter until evenly coated.
  5. Spread the chicken mixture evenly in a 9x13 inch baking dish, smoothing the top.
  6. Sprinkle the cracker topping evenly over the chicken layer.
  7. Bake in the preheated oven for 45 minutes, or until the top is golden brown and the filling is bubbly.
  8. Let the casserole rest for 5 minutes before serving.

Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat at 350°F (175°C) for 20-25 minutes.
