  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 omega-3 enriched eggs
  • 1/4 cup unsalted butter melted
  • Oil for frying canola or vegetable

Method
 

  1. In a large mixing bowl, whisk together 2 cups all-purpose flour, 1/2 cup granulated sugar, 2 teaspoons baking powder, 1 teaspoon ground nutmeg, and 1/2 teaspoon salt.
  2. In another bowl, whisk 1/2 cup milk, 2 omega-3 enriched eggs, and 1/4 cup melted unsalted butter until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until just combined, leaving a few lumps.
  4. Heat about 2 inches of oil in a deep frying pan over medium heat to 350°F (175°C).
  5. Flour a work surface and roll out the dough to 1/2 inch thickness.
  6. Use a donut cutter or two round cutters to cut out donut shapes.
  7. Carefully lower a few donuts into the hot oil and fry for 2-3 minutes per side, until golden brown.
  8. Use a slotted spoon to transfer the donuts to a cooling rack lined with paper towels to drain excess oil.

Notes

These donuts are best enjoyed fresh and warm. Customize with glazes or powdered sugar as desired.
