Ingredients
  

Noodles and Vegetables
  • 8 ounces fresh egg noodles or dried chow mein noodles
  • 2 tablespoons vegetable oil
  • 1 cup shredded cabbage
  • 1 cup diced carrots about 2 medium carrots
  • 1 cup sliced mushrooms
  • 4 green onions cut into 1-inch pieces
  • 2 cloves garlic minced
  • 1 teaspoon minced fresh ginger
Sauce
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 2 tablespoons chicken broth
Optional Garnish
  • Sesame seeds
  • Extra green onions
  • Sliced red pepper for color

Equipment

  • Large pot
  • Colander or strainer
  • Large wok or skillet

Method
 

  1. Fill a large pot with water, bring to a rolling boil over high heat, then add a pinch of salt.
  2. Add the egg noodles and cook for 3 to 4 minutes if fresh or 5 to 6 minutes if dried.
  3. Drain noodles in a colander without rinsing; toss with a light drizzle of oil if not cooking immediately.
  4. While noodles cook, shred cabbage, dice carrots, slice mushrooms, chop green onions into 1-inch pieces, and mince garlic and ginger.
  5. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, sugar, white pepper, and chicken broth until sugar dissolves.
  6. Heat a wok or large skillet over high heat until a drop of water sizzles and evaporates, about 1 minute.
  7. Add 1 tablespoon vegetable oil to the hot wok, then add garlic and ginger and stir for 20 seconds until fragrant.
  8. Add carrots and mushrooms and stir-fry for 2 minutes, then add cabbage and green onions and cook for 1 to 2 minutes until tender-crisp.
  9. Add drained noodles and remaining 1 tablespoon vegetable oil; toss for 30 seconds, then pour in sauce and toss for 1 to 2 minutes until noodles are glossy and coated.
  10. Remove wok from heat, taste, and adjust seasoning with additional soy sauce or sesame oil before serving.

Notes

Leftovers keep in an airtight container in the refrigerator for up to 3 days; reheat in a skillet over medium-high heat with a splash of broth to restore moisture.
