  • 1 cup orzo pasta
  • 4 cups vegetable or chicken broth
  • 2 tablespoons unsalted butter
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley optional

Method
 

  1. Bring 4 cups of vegetable or chicken broth to a gentle boil in a medium saucepan over medium-high heat.
  2. Stir in 1 cup orzo pasta, then reduce heat to medium and cook uncovered.
  3. Let the orzo cook for 9 to 11 minutes, stirring occasionally, until tender yet slightly firm.
  4. Drain any excess broth, reserving about 1/2 cup to maintain creaminess.
  5. Return the saucepan to low heat and stir in 2 tablespoons unsalted butter until melted.
  6. Gradually add 1 cup grated Parmesan cheese, stirring until completely melted and the mixture is creamy.
  7. Season with salt and pepper to taste, tasting first to account for broth saltiness.
  8. Garnish with 2 tablespoons chopped fresh parsley if desired and serve immediately.

Notes

Always taste before seasoning, especially with broth, as it can be salty.
