  • 3 cups rolled oats
  • 1 cup natural peanut butter
  • 1/2 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup nuts e.g., almonds or walnuts, chopped
  • 1/2 cup dried fruit e.g., cranberries or raisins, optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine the peanut butter, honey or maple syrup, vanilla extract, and salt and mix until smooth.
  4. Stir in the rolled oats, ensuring each oat is coated with the peanut butter mixture.
  5. Add the chopped nuts and stir to combine.
  6. Spread the granola mixture evenly on the prepared baking sheet.
  7. Bake for 20-25 minutes at 350°F (175°C), stirring halfway through for even toasting.
  8. Remove from the oven and let the granola cool completely on the baking sheet; once cool, stir in dried fruit if using and store in an airtight container.

Notes

Let the granola cool completely before storing to maintain its crunch.
