  • 2 cups crushed pineapple drained
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground nutmeg
  • 1 ready-made pie crust
  • 1 tablespoon butter cut into small pieces

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the drained crushed pineapple, granulated sugar, cornstarch, salt, vanilla extract, lemon juice, and ground nutmeg.
  3. Roll out the pie crust to fit a 9-inch pie dish if using a homemade crust.
  4. Pour the pineapple filling into the prepared crust, distributing it evenly.
  5. Dot the filling with small pieces of butter.
  6. Cover with a second crust, crimp the edges, and cut vents to allow steam to escape.
  7. Bake for 45 minutes, covering the crust edges with foil if they brown too quickly.
  8. Remove from the oven and let cool completely on a cooling rack before slicing.

Notes

Let the pie cool completely for the best slices. Serve with whipped cream or ice cream if desired.
