Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 can 28 ounces crushed tomatoes
  • 2 cups chicken or vegetable broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes optional
  • 1 cup pepperoni slices or any preferred toppings
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish optional

Method
 

  1. Heat the olive oil in a large pot over medium heat. Sauté the chopped onion for about 5 minutes until translucent, then add minced garlic and cook for 1 minute until fragrant.
  2. Stir in the crushed tomatoes and cook for 2 minutes to blend flavors.
  3. Pour in the chicken or vegetable broth and bring the soup to a simmer over medium-high heat.
  4. Add the Italian seasoning and red pepper flakes, stir well, and taste to adjust seasoning.
  5. Add the pepperoni slices and stir to combine.
  6. Reduce heat to medium-low and let the soup simmer for 15 minutes, allowing flavors to meld.
  7. Stir in the shredded mozzarella and grated Parmesan cheese until melted and bubbly.
  8. Serve hot, garnished with fresh basil if desired.

Notes

For extra flavor, add a splash of balsamic vinegar before serving.
