  • 2 pounds purple potatoes
  • 1/2 cup milk or plant-based alternative
  • 1/4 cup butter or olive oil for vegan option
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh chives or parsley chopped (for garnish)

Method
 

  1. Wash the purple potatoes thoroughly to remove dirt and residue.
  2. Cut the potatoes into quarters for even cooking; place them in a large pot, cover with water, and add a pinch of salt.
  3. Bring to a boil over high heat, then reduce to a simmer and cook for 20 minutes or until a fork easily pierces the potatoes.
  4. Drain the potatoes in a colander and let sit for a few minutes to release steam.
  5. Transfer the drained potatoes to a mixing bowl and mash with a potato masher or fork until smooth.
  6. Stir in 1/2 cup milk and 1/4 cup butter until well combined and creamy.
  7. Season with salt and black pepper to taste.
  8. Serve the mashed potatoes in a serving dish and garnish with chopped chives or parsley.

Notes

For extra flavor, try adding roasted garlic to the mash before serving.
