- Wash the purple potatoes thoroughly to remove dirt and residue.
- Cut the potatoes into quarters for even cooking; place them in a large pot, cover with water, and add a pinch of salt.
- Bring to a boil over high heat, then reduce to a simmer and cook for 20 minutes or until a fork easily pierces the potatoes.
- Drain the potatoes in a colander and let sit for a few minutes to release steam.
- Transfer the drained potatoes to a mixing bowl and mash with a potato masher or fork until smooth.
- Stir in 1/2 cup milk and 1/4 cup butter until well combined and creamy.
- Season with salt and black pepper to taste.
- Serve the mashed potatoes in a serving dish and garnish with chopped chives or parsley.
Notes
For extra flavor, try adding roasted garlic to the mash before serving.
