Ingredients

  • 3 tablespoons olive oil
  • 2 large yellow onions thinly sliced
  • 3 cloves garlic minced
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt plus more to taste
  • 1/2 teaspoon black pepper
  • 1 pound protein of choice chicken thighs, beef sirloin, or chickpeas, cut into bite-sized pieces
  • 1 cup vegetable or chicken broth
  • 1 can 14 ounces diced tomatoes
  • 1/2 cup Greek yogurt or sour cream
  • 2 tablespoons fresh cilantro chopped, for garnish
  • Juice of 1 lime

Equipment

  • Large skillet or saute pan

Method
 

  1. Prepare all ingredients by slicing the onions thinly and mincing the garlic; set aside.
  2. Heat 3 tablespoons olive oil in a large skillet over medium heat for 1 minute.
  3. Add ground cumin, smoked paprika, and cayenne pepper to the hot oil and stir constantly for 30 to 45 seconds until fragrant.
  4. Add sliced onions to the skillet and cook for 8 to 10 minutes, stirring occasionally, until they soften and begin to caramelize.
  5. Stir in minced garlic and cook for 1 to 2 minutes, stirring frequently, until fragrant without browning.
  6. Add the protein of choice and cook for 4 to 6 minutes, stirring or turning pieces, until mostly cooked through.
  7. Pour in the broth and add diced tomatoes with their liquid; stir to combine and simmer for 8 to 10 minutes.
  8. Taste and season with additional salt and black pepper as needed.
  9. Remove the skillet from heat, stir in Greek yogurt or sour cream until smooth, then squeeze in lime juice and fold in most of the cilantro.
  10. Garnish with remaining cilantro and serve immediately with your choice of accompaniments.

Notes

Serve with rice, bread, or in wraps; leftovers reheat well and taste even better the next day.
