Ingredients

  • 1 can 14.75 oz salmon, drained and flaked
  • 1/2 cup breadcrumbs plain or seasoned
  • 1/4 cup green onions finely chopped
  • 1/4 cup bell pepper finely chopped
  • 1 large egg beaten
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • Vegetable oil for frying

Method
 

  1. Drain and flake the salmon into a mixing bowl.
  2. Add breadcrumbs, green onions, bell pepper, beaten egg, mayonnaise, Dijon mustard, and Old Bay seasoning to the salmon and mix until combined.
  3. Season with salt and pepper to taste.
  4. Form the mixture into 8 patties about 2 inches in diameter, pressing firmly so they hold together.
  5. Heat about 1/2 inch of vegetable oil in a skillet over medium heat until shimmering.
  6. Fry the croquettes for 3 to 4 minutes per side, or until golden brown and crispy.
  7. Transfer the cooked croquettes to a plate lined with paper towels to drain excess oil.
  8. Serve hot with tartar sauce or remoulade, and enjoy immediately.

Notes

Serve with tartar sauce or spicy remoulade. Don't overcrowd the pan while frying to maintain oil temperature.
