Method
- Drain and flake the salmon into a mixing bowl.
- Add breadcrumbs, green onions, bell pepper, beaten egg, mayonnaise, Dijon mustard, and Old Bay seasoning to the salmon and mix until combined.
- Season with salt and pepper to taste.
- Form the mixture into 8 patties about 2 inches in diameter, pressing firmly so they hold together.
- Heat about 1/2 inch of vegetable oil in a skillet over medium heat until shimmering.
- Fry the croquettes for 3 to 4 minutes per side, or until golden brown and crispy.
- Transfer the cooked croquettes to a plate lined with paper towels to drain excess oil.
- Serve hot with tartar sauce or remoulade, and enjoy immediately.
Notes
Serve with tartar sauce or spicy remoulade. Don't overcrowd the pan while frying to maintain oil temperature.
