Ingredients
  

Lion's Mane Mushrooms
  • 1.5 pounds fresh lion's mane mushrooms gently torn into bite-sized pieces
  • 3 tablespoons unsalted butter divided
  • 2 tablespoons olive oil
  • 5 cloves garlic thinly sliced
  • 4 sprigs fresh thyme or 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1/4 teaspoon red pepper flakes optional
  • 2 tablespoons dry white wine or vegetable broth optional
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Clean the lion's mane mushrooms under cool running water, brush off any debris, and pat completely dry with paper towels.
  2. Tear the mushrooms into bite-sized pieces by hand, following their natural grain.
  3. Heat a large skillet over medium-high heat for about 1 minute until hot.
  4. Add 1 tablespoon olive oil and 1 tablespoon butter to the pan and swirl to combine.
  5. Add half of the mushroom pieces in a single layer and cook undisturbed for 3 to 4 minutes until golden brown.
  6. Stir and cook for an additional 2 to 3 minutes until tender, then transfer to a plate and repeat with remaining oil, butter, and mushrooms.
  7. Return all mushrooms to the pan, add sliced garlic and fresh thyme, and cook for 1 minute until fragrant.
  8. Optional: pour in white wine or broth to deglaze the pan, scrape up browned bits, and reduce by half over 1 to 2 minutes.
  9. Remove from heat, stir in lemon juice, season with salt, black pepper, and red pepper flakes, then transfer to a serving dish and garnish with chopped parsley.

Notes

Do not overcrowd the pan to ensure proper browning; serve warm and store leftovers in an airtight container in the refrigerator for up to 3 days.
