  • 1 pound Brussels sprouts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic minced
  • 1/4 cup grated Parmesan cheese optional
  • Juice of 1 lemon optional

Method
 

  1. Trim the ends of the Brussels sprouts and remove any yellow or wilted leaves.
  2. Using a sharp knife or mandoline slicer, slice the Brussels sprouts thinly for even cooking.
  3. Heat 2 tablespoons olive oil in a large skillet over medium heat (about 350°F) until shimmering, about 1 minute.
  4. Add the shaved Brussels sprouts to the skillet in a single layer and sauté for 5-6 minutes, stirring occasionally, until they begin to brown.
  5. Add minced garlic and sauté for 1-2 minutes until fragrant, taking care not to burn the garlic.
  6. Season with 1 teaspoon salt and 1/2 teaspoon black pepper, stirring to combine.
  7. Continue cooking for 2-3 minutes more until the sprouts are golden brown and tender.
  8. Stir in 1/4 cup grated Parmesan cheese and the juice of 1 lemon right before serving.

Notes

For extra crunch, add toasted nuts or seeds before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
