Method
- Combine 1 cup buttermilk and 1 tablespoon hot sauce in a mixing bowl and marinate the 4 boneless chicken breasts for at least 10 minutes.
- Flatten the marinated chicken breasts with a meat mallet or rolling pin to an even thickness.
- In a bowl, mix 1 cup all-purpose flour, 1 teaspoon paprika, 1 teaspoon cayenne pepper, and salt and pepper to taste, then dredge the chicken in the flour mixture.
- Heat oil in a large skillet or frying pan over medium-high heat (about 350°F).
- Fry the chicken breasts for 5 to 7 minutes per side until golden brown and the internal temperature reaches 165°F.
- In a small mixing bowl, whisk together 1/2 cup mayonnaise and 1 tablespoon chili powder to make the sauce.
- Spread the sauce on the bottom halves of 4 hamburger buns, then top with shredded lettuce and fried chicken.
- Place the top bun halves on the sandwiches and serve immediately.
Notes
Let the breaded chicken rest for a few minutes before frying for extra crispiness.
