  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract optional

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, vanilla extract, and almond extract to the butter-sugar mixture and mix until fully combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined, being careful not to over-mix.
  6. Cover the dough and chill it in the refrigerator for at least 30 minutes.
  7. After chilling, roll out the dough on a floured surface to your desired thickness.
  8. Use cookie cutters to cut shapes from the dough and place them on a parchment-lined baking sheet.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Remove the cookies from the oven and let them cool slightly on the baking sheet before transferring to a wire rack to cool completely.

Notes

To achieve perfectly baked cookies, keep an eye on them as they will continue to bake slightly after removal from the oven.
