Ingredients

  • 3 large eggs
  • 2 medium ripe tomatoes chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped green onions optional

Method
 

  1. Wash and chop 2 medium ripe tomatoes into bite-sized pieces.
  2. In a bowl, beat 3 large eggs with 1/2 teaspoon salt and 1/4 teaspoon black pepper until well combined.
  3. Heat 2 tablespoons olive oil in a large skillet over medium heat until shimmering.
  4. Add chopped tomatoes to the skillet and sauté for 3 to 4 minutes until they soften and release their juices.
  5. Stir occasionally and cook the tomatoes for an additional 2 minutes until they form a saucy base.
  6. Pour the beaten eggs over the tomato mixture and let sit without stirring for 2 to 3 minutes to allow curds to form.
  7. Gently scramble the eggs and tomatoes together, cooking for about 1 minute more until the eggs are just set.
  8. Remove from heat and garnish with chopped green onions if desired, then serve immediately.

Notes

Use fresh, ripe tomatoes for the best flavor. Canned tomatoes can be used if fresh are unavailable.
