Ingredients

  • 1 pound fresh or dried pasta fettuccine, linguine, or tagliatelle work best
  • 1 can 17.6 ounces Trader Joe's Lobster Bisque
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1/2 cup dry white wine Sauvignon Blanc or Pinot Grigio
  • 3 cloves garlic minced
  • Kosher salt to taste
  • Fresh cracked black pepper to taste
  • 1/4 teaspoon cayenne pepper optional, for subtle heat
  • Juice of 1/2 lemon
  • 2 tablespoons fresh tarragon or parsley chopped
  • 2 ounces fresh cooked lobster meat or quality lump crab optional garnish
  • Zest of 1 lemon for finishing
  • Grated Parmesan cheese for serving

Method
 

  1. Fill a large pot three-quarters full with cold water and bring to a rolling boil, then season generously with kosher salt.
  2. Add pasta and cook for one minute less than package instructions over high heat, stirring to prevent sticking.
  3. Meanwhile, melt butter in a medium saucepan over medium heat and sauté minced garlic for about 90 seconds until fragrant.
  4. Pour in the dry white wine and scrape the bottom of the pan, then let it reduce by half, about 3 to 4 minutes.
  5. Add the Trader Joe's Lobster Bisque and heavy cream, whisk until smooth, and simmer gently for 2 minutes without boiling.
  6. Stir in lemon juice, cayenne pepper if using, and season with kosher salt and fresh cracked black pepper to taste.
  7. Drain pasta, reserving at least one cup of pasta cooking water.
  8. Add the pasta to the bisque sauce and toss to coat, adding reserved pasta water a splash at a time until the sauce reaches desired consistency.
  9. Divide pasta among warm bowls, garnish with fresh herbs, lemon zest, lobster meat or crab if using, and finish with grated Parmesan and cracked pepper.

Notes

Never let the sauce boil once the cream is added to prevent separation.
