- Finely chop the onion and bell pepper until uniform to ensure even cooking.
- Heat the skillet over medium heat and add a splash of oil; sauté the onion and bell pepper until softened, about 5 minutes.
- Add the minced garlic to the pan and cook for an additional 1 minute until fragrant.
- Add the ground turkey, breaking it up with your spoon; cook over medium heat until browned and no longer pink, about 7 minutes.
- Stir in ketchup, Worcestershire sauce, brown sugar, chili powder, salt, and black pepper, mixing thoroughly.
- Reduce heat to low and simmer the mixture, stirring occasionally, for 5 to 10 minutes to meld flavors.
- While the mixture simmers, toast the buns in a separate pan or in the oven until golden brown, about 2 to 3 minutes.
- Assemble the sloppy joes by spooning the turkey mixture onto the toasted buns and serve immediately.
