- Use a meat mallet to gently pound the veal cutlets until they are even in thickness.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs seasoned with salt and pepper.
- Dredge each cutlet first in flour, then dip into beaten eggs, and finally coat with seasoned breadcrumbs.
- Heat enough olive oil to cover the bottom of a large skillet over medium heat until shimmering, about 2 minutes.
- Fry the breaded cutlets for 4 to 5 minutes per side, or until golden brown and cooked through.
- Transfer the browned cutlets to an oven-safe baking dish in a single layer.
- Spread marinara sauce over each cutlet, then top with mozzarella and Parmesan cheese.
- Bake in a preheated oven at 375°F (190°C) for 15 minutes, or until the cheese is melted and bubbly.
