  • 4 veal cutlets
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for frying

Method
 

  1. Use a meat mallet to gently pound the veal cutlets until they are even in thickness.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs seasoned with salt and pepper.
  3. Dredge each cutlet first in flour, then dip into beaten eggs, and finally coat with seasoned breadcrumbs.
  4. Heat enough olive oil to cover the bottom of a large skillet over medium heat until shimmering, about 2 minutes.
  5. Fry the breaded cutlets for 4 to 5 minutes per side, or until golden brown and cooked through.
  6. Transfer the browned cutlets to an oven-safe baking dish in a single layer.
  7. Spread marinara sauce over each cutlet, then top with mozzarella and Parmesan cheese.
  8. Bake in a preheated oven at 375°F (190°C) for 15 minutes, or until the cheese is melted and bubbly.
  9. Let the cutlets rest for 5 minutes before serving.
